Kale, Apple, and Pomegranate Salad

Ingredients:


  • 1 bunch of fresh kale, stems removed and leaves chopped

  • 1 apple, sliced thinly

  • 1/2 cup pomegranate seeds

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup walnuts, toasted and chopped

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon maple syrup or honey

  • Salt and pepper, to taste





Instructions:


  1. Kale Prep: Place the chopped kale in a large bowl. Sprinkle with a pinch of salt and massage the leaves gently with your hands until the kale begins to soften.

  2. Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, and maple syrup. Season with salt and pepper to your liking.

  3. Salad Assembly: To the kale, add the sliced apple, pomegranate seeds, and red onion. Toss to combine.

  4. Add Crunch: Sprinkle the toasted walnuts over the salad.

  5. Dress and Serve: Drizzle the dressing over the salad, toss well to coat evenly, and serve.
